Valpolicella

Designation of origin
UNFILTERED WINE

Colour red with purple hues.
Nose: floral notes blended with cherries and raspberries.
On the palate: smooth but with good acidity, quite long.

Harvesting

The grapes are selected and hand-picked in 5-6 kg crates.

Vinification and aging

The wine is made in stainless steel vats with a cold maceration phase followed by slow spontaneous controlled temperature fermentation.

All the grapes are grown on our family’s estate vineyards. For our vines, we have chosen the guyot training system from which we obtain a low yield of grapes per plant to better express the characteristics of the autochthonous varieties.

Valpolicella DOC Superiore

Designation of origin

Colour ruby red.
On the nose: floral notes blended with red berries like raspberries and blackberries. On the palate: smooth but with good acidity and tannin content,
slightly spicy with sweet notes of ripe fruit.

Harvesting

The grapes are selected and hand-picked in 5-6 kg crates.
Short natural drying for twenty/thirty days.

Vinification and aging

The wine is made in stainless steel vats
with a cold maceration phase followed by slow spontaneous controlled temperature fermentation. The skins are gently crushed to get all the juice from the grapes.
Ageing in oak barrels for 30 months. Bottle ageing for 90 days.

Valpolicella Ripasso Superiore

Designation of guaranteed origin

An intense ruby red colour. Nose: red fruit such raspberry and blackberry.
Soft taste with ample tannins, slightly spicy with sweet hints of black cherry and ripe fruit.

Harvesting

The grapes are selected and hand-picked in 5-6 kg crates.

Vinification and aging

We use a traditional technique called “ripasso”, in which the Valpolicella wine obtained from fresh grapes is added to the pomace of freshly pressed Amarone and left to sit, lending it sweetness, colour, and roundness.
Aged in oak barrels for 30 months.
Bottle ageing for at least 6 months.

Amarone della Valpolicella

Designation of guaranteed origin

Colour ruby red with garnet hues.
On the nose: fine and elegant, notes of
small berries mixed with spices.
On the palate: warm and enveloping, good structure with mature tannin content.
Recalls red fruit like cherries and raspberries. Lingering.

Harvesting

Grapes selected and harvested by hand in boxes of 5-6 natural Kg.
Drying of grapes for more than 90 days

Vinification and aging

The wine is made in stainless steel vats with a cold maceration phase followed by slow spontaneous controlled temperature fermentation. The skins are gently crushed every day to get all the juice from the grapes.
Ageing in oak barrels for at least 30 months. Bottle ageing for 6 months.

Typical Geographical Indication

On the nose: ripe fruit and spices, ethereal.
On the palate: distinct and enveloping, with elegant tannin.
Recalls small berries like redcurrants and raspberries.

The grapes are selected and handpicked in 5-6 kg crates.
Short natural drying for about twenty days.

Vinification and aging

The slow maceration phase is followed by a lengthy controlled temperature fermentation phase, that releases all the aromatic components, and with the gentle crushing of the caps, all the juice is extracted from the grapes. Ageing in oak barrels for 30 months. Bottle ageing for 90 days.
